What you are seeing is totally normal and part of the design of the clamping mechanism. The clamp is built so the one nearer to the back of the sharpener is stationary and the one nearer to the front has some play.
Although the sharpener uses less than 200 watts, we've found that many 300-watt and even 500-watt inverters don't work reliably with the sharpener. We've also observed that approximated sine waves are less likely to work than pure sine wave devices.
